Egg-it

We had a nice dinner last night that included a side I'd like to share. It was a bit unusual, and unexpected, but very good.

We had meatloaf (made with Corn Flakes - no gluten) which was very good. To get in some greens without a normal boring salad, I made this:

Ingredients:
4 eggs
5-6 large mushrooms, sliced
4 small handfuls of baby arugula, cleaned
1 tbsp lemon juice
salt and pepper

Sautee the mushrooms with some butter, the lemon juice and some salt and pepper until warm, soft and brown.
Place a small handful of arugula on each plate.
Cover with cooked mushrooms.
Poach the eggs in boiling water, until yolk is cooked to medium doneness (runny but thick).
Put one egg on top of arugula/mushrooms on each plate.

That's it.
It sounded weird to my family too, but everyone really liked it and it was a good compliment to the meatloaf.
