In a Pinch

"I don't know what to make for dinner."
"I thought you had the menu all planned out."
"I thought I did, but apparently I was one night short. So I've come to the point where I've run out of meals."
"Well, let's see. There's chicken in the freezer, and I bought these tortellini over the weekend that we haven't eaten yet. Oh, and I got some Alfredo sauce too. There, that will work, right?"
"Yeah, I can do something with that. Thanks."
And off he went to bed, not feeling well.
So, here is what I did. It was really good and took about 20 minutes.

You'll need:
Olive oil
Cinnamon
Boneless, skinless chicken breasts cut into bite sized pieces
3 long carrots
1 Package of cheese tortellini
1 Package of Alfredo sauce
Salt
Pepper

Cook tortellini as per package instructions, drain and rinse, set aside.
Meanwhile, put 2 turns of olive oil in a skillet.
Add 3 -4 shakes of cinnamon to the olive oil.
Heat until the cinnamon begins to move around and you can smell it in the air.
Add the chicken, salt and pepper and cook 3-4 minutes.
Add carrots and cook chicken and carrots together until carrots are just beginning to soften.
Add the Alfredo sauce to the skillet ingredients and turn heat to medium, mixing and keeping Alfredo sauce moving, until sauce is heated with other ingredients.
Add tortellini and turn to mix.

That's it! Done! Serve it quickly so the sauce doesn't sit and thicken to a paste!

The kids loved this quick meal. I got carrots in there, which they ate readily, and I served it with a very simple salad of mixed greens and cucumbers, with just a bit of olive oil, pepper and kosher salt. Too easy. So good.

I like the recipe. Sounds very good and very kid-friendly (well, it's pasta...). The cinnamon is a creative touch, too.
