Here’s a little something AJ and I made tonight. The kids are beginning their state testing at school (No Child Left Behind requires an awful lot of testing). The teachers keep sending reminders home that they should be well rested, and well fed in the morning. And, they may need an extra snack at school to keep their energy up. Yikes.
So, I thought of breadsticks. Homemade breadsticks. AJ and I made these together and they have been kid tested and enthusiastically approved. They were super simple to make, and only took about 5 minutes of prep time before they went into the oven.
1 “loaf” frozen bread dough (from the freezer section at the grocery store), defrosted
¼ cup finely grated parmesan cheese
1 Tbs salt
1 Tbs garlic powder
Combine the parmesan, garlic powder and salt. Mix well. Pour mixture onto flat cutting board or plate. Lay each length of rolled dough in the mixture, coating only one side. Lay the coated dough onto one of the cookie sheets, coated side up. Repeat until all dough is coated. Spray breadsticks lightly with cooking spray and put in oven.
Bake for 15-20 minutes, or until cheesey coating is just beginning to brown, and bread is golden.
Cool on parchment or cooling rack.
The bread dough that I buy comes two “loaves” to a package. I made this recipe one loaf at a time and saved the second one in the fridge. It lasts in the fridge for a few days, at least. I’ll make a second batch mid-week, since it’s SO easy!
These breadsticks are great plain, dipped in mustard, or even dipped in plain sour cream. I’m sure there are thousands of other great ways to eat them. And, I just know they’d be delicious made with a cinnamon and sugar coating instead of a garlicy cheese coating. Oh, so many options!
